Made with simple yet flavourful ingredients, these vegan ribs consist primarily of pinto beans, potatoes and a customized choice of spices, which together create a perfect base for this rich and textured dish. The final crunchiness is guaranteed by a coating of breadcrumbs enriched with chopped pistachios and lemon zest, which adds a fresh and slightly acidic touch.

  • 250 g cooked borlotti beans, drained
  • 100 g boiled potatoes
  • 1 tablespoon spices (mix to taste)
  • 100 g breadcrumbs
  • 2 tablespoons pistachios (grains)
  • 1 bunch fresh basil or mint
  • 1 lemon juice and untreated zest

 HOW TO PREPARE VEGAN RIBS WITH BORLOTTI BEANS

1.I started by scooping the pinto beans and boiled potatoes into the food processor, to which I added salt, pepper and a blend of spices to taste. I turned on the robot to blend the ingredients until the mixture was compact but still a little coarse.

Subsequently, I incorporated half the breadcrumbs, little by little, to make the mixture more malleable.

2.After dividing the dough into ten equal parts, I shaped each portion into a triangular shape at least 1 cm high.On one of the long sides, I inserted a wooden stick, previously soaked for at least an hour to prevent it from burning during cooking.

You will need 12 and recycled popsicle sticks will be perfect.

3.I mixed the remaining breadcrumbs with additional salt and pepper, the grated lemon zest and the chopped pistachios. I then dipped the ribs in this mixture to coat them evenly.

I placed them on a baking tray lined with baking paper, greased them with seed oil and baked them in a preheated oven at 200 degrees for about 35 minutes. Once cooked, I let them cool completely and then reheated them for another 10 minutes in grill mode, so as to make them compact and crunchy.

Finally, I served the vegan cutlets with borlotti beans with a vegetable cream of your choice and fresh aromatic herbs, thus completing the dish.

Absolutely! Canned Borlotti sap work just fine for this form. Just make sure to drain and wash them well before using.

2.Can I indurate the croquettes for after use?

Yes, you can! Once the croquettes are cooked, let them cool fully, also store them in an watertight vessel or freezer bag. They should last in the freezer for over to 3 months. To overheat, simply singe them in the roaster until hotted through.
